Earlier this spring, a sweet baby colt was born to a horse here at our guest ranch near Houston. She is growing and promises to be an outstanding trail riding horse once she grows a bit more – she has a lovely, gentle temperament. We look forward to getting her out on the 650 acres of our Houston guest ranch with our other horses. We have gaited Paso Fino – or “Fine Step” – horses. Known for their friendly dispositions and their gentle gaits, they win over all who ride them. These are not bouncy horses, which means they are ideal for long trail rides, and for riders of all experience levels; while they can canter and gallop with the best of them, they prefer a fast walk.

Our trail rides near Houston are all guided, so in addition to being comfortable in your saddle, you can trust that you are safe. Our experienced guides will lead you through tall grasses in meadows, across cooling creeks, and through shaded oak forests.

With nearly 650 acres to roam, Blisswood has plenty of room to relax and enjoy a nice leisurely horseback ride through meadows and oak forests, across creeks, and past soothing ponds. If you feel like you need a lesson before heading out for a trail ride near Houston, we can certainly arrange that. Or, if you decide you would rather sit back in a stagecoach and let someone else take charge of the horse, you may.

Horseback riding is a lovely activity during your stay at our guest ranch in Cat Spring Texas. During the day you’ll be out exploring the ranch, and when you are ready to rest, you may retreat to your private cottage for refreshments. Your schedule is your own, and you may even schedule a massage, facial or salt-glow body scrub right in your own lodging. How is that for relaxing?

Our fine dining restaurant near Houston has been praised for many years. Back in 2004, Cowboys and Indians, The Premier Magazine of the West gave us a rave review. Founded in 1993, Cowboys and Indians is an “international magazine of the highest quality… encompassing everything exceptional about the American West: history and legend, hardworking people, dramatic vistas, enduring values” (C&I website).

In C&I’s 40 Finds for ‘04 edition, Writer Dana Joseph visited our establishment and dubbed it “a cowboy hunter haven of a restaurant,” which sounds like a good thing to us. The author highlighted our bison and armadillo egg dishes – staples in Texas ranch country. Visitors from out-of-state should not pass up the opportunity to taste these foods that can be hard to find elsewhere.

If you are on the road to or from Houston, we hope you will stop by Carol’s and dig into some of our delicious, hearty food. Texas Monthly Praises Carol's

Texas Monthly magazine was created in 1972 by Michael R. Levy, a young man from Dallas who was “convinced that my state was ready for a really first class magazine that will appeal directly to the sophisticated, cosmopolitan folks that Texans have become.” (Texas Monthly, Feb. 1973). Since then, the magazine has grown and developed with the times, and can today be found online at www.texasmonthly.com. According to Texas Archival Resources Online, “the magazine began to define how Texas was emerging as a contemporary urban state while still clinging to its rural mythic past.”

It is no surprise that  Texas Monthly discovered fine dining in Cat Spring Texas. According to the magazine, if “hunger strikes while you’re traveling between Austin and Houston, detour a short distance and check out Carol Davis’ little oasis in a building that looks like a lodge. Here chef Doug Atkinson, who once cooked for Ruggles’ restaurants in Houston, is turning out dishes that far exceed the road-food norm. Lunch runs to sandwiches, burgers, and salads like grilled salmon with balsamic vinaigrette. Dinners include excellent bison fillet with port wine sauce and a fine, juicy pork chop with homemade apple butter.”

Proof enough that Carol’s is worth a detour while out and about in the Texas countryside. Consider extending your meal with a stay at Carol’s romantic guest ranch.
