This couple got engaged recently at Carol’s Restaurant. They met on an online dating site for Christian singles in April and quickly fell in love, according to Blisswood owner Carol Davis.

He surprised her by suggesting dinner in the country, and then surprised her again with an engagement ring.

Carol’s Restaurant is the perfect place for those in the mood for love – and for a memorable meal. The restaurant’s interior is Texas country, with appointments in cedar and cowhide. Tables are topped with white linens and votive candles, giving the room a warm glow. The menu offers Texas favorites like steaks and chops, as well as sophisticated seafood and pasta offerings.

As for the couple who got engaged at Carol’s: He is a Harley rider and his fiancé is learning to share his enjoyment of motorcycle riding.

The couple was married October 6, 2012, in an intimate ceremony at the Gazebo at Enchanted Lake. They exchanged their vows before BlissWood owner Carol Davis, who is also an ordained minister.

They enjoyed champagne, a gourmet dinner at Carol’s Restaurant, a Cat Spring Favorite, and a “tropical’’ mini honeymoon at Kit’s Bungalow, one of the options nearby at The Oasis at BlissWood. Bow WOW: So Many Animals at Our Texas Guest Ranch!

Do you miss your animals when you travel?  If so, you are not alone. Pets are part of our families. It’s only natural to think about them when we’re away.

At BlissWood Bed and Breakfast, any separation anxiety will be short-lived. Our property an hour west of Houston abounds with animals. You can walk among them, and talk to them.

BlissWood owner Carol Davis raises South American Paso Fino horses, Angus cattle and miniature donkeys at her Lehmann Legacy Ranch in Cat Spring, Texas.

Walk around our 650-acre property and you’ll encounter many animals: horses, alpaca, camels, peacocks, black buck antelope, chickens, ducks, geese, goats, a pot belly pig and American Bison.

One of the most popular critters at our guest ranch is Roger Roo, a kangaroo. He is such a hit with guests that he has his own fan club.

Carol has a soft spot for and deep personal connection with border collies. She rescues and fosters members of this breed through All Border Collie Rescue, giving them a comfortable and loving temporary home until they are adopted and move to their new “forever home.’’

“A lot of the dogs are on their last day when I rescue them,’’ Carol says.  “I adopted two of them myself, Lady is one and Hannah the other.’’

Hannah (above) appeared in Cabela’s summer 2012 catalogue. The outdoor outfitter spent 10 days at our ranch for a photo shoot earlier this year.

“My husband and I spend a weekend at a different bed and breakfast each year for our wedding anniversary. This year we picked BlissWood in Cat Spring, Texas. We are quite fond of antiques and rustic decor so we picked the Log Cabin. (will include link to check dates/availability) We were not disappointed.

“The cabin was well built. The furniture and appliances were quite neat to use. The gas stove was made by Firestone and the General Electric refrigerator had the coils on top. Oh yes, there was electricity and air conditioning so it wasn’t too rustic!

“We had a wonderful dinner at Carol’s at Cat Spring Restaurant. The ribeye was large and juicy, potatoes were the best we’ve had, and we even had some complementary watermelon granita, which was very refreshing!

Saddle Up at Our Bed and Breakfast in Texas Hill Country

When is the last time you went horseback riding? Or the last time you even SAW a horse (other than your city’s mounted police patrol)?

Horses are an integral part of the landscape and environment at BlissWood Bed and Breakfast Inn, on our 650-acre working ranch near Houston.  They’re part of our family, really. And guided horseback rides are one of the most popular activities we offer.

This couple, visiting from Houston, stayed in the Enchanted Cabin and took advantage of our horseback/picnic package. Their guide took them from the barn to Enchanted Lake on horseback, where a picnic basket was waiting for them in a gazebo on an island at Enchanted Lake. After lunch, a golf cart took them back to the barn.

In the course of making arrangements, Carol learned the couple had dated in high school, gone their separate ways and made families.

When they were both single again, they saw each other at a baseball field where their children were playing. They rekindled their romance, and the rest, as they say, is history.

The couple’s children played a prominent role in their wedding at BlissWood, and the ceremony was followed by a cake and punch reception at Carol’s at Cat Spring Restaurant.

Couple celebrates 40th Anniversary at Texas Bed and Breakfast

A relaxing way to celebrate a special wedding anniversary is to take a mini vacation with the one you love. That’s exactly what this couple did. They celebrated their 40th anniversary with us at BlissWood Bed and Breakfast Inn, in the Texas Hill Country.

The couple met on a blind date more than 40 years ago. In that time, they have enjoyed many anniversary celebrations. This one was extra special! They stayed in the Texas Farmhouse at BlissWood, and left this note in our Guest Book.

“It may be 2012, but this weekend we experienced life in 1912!  Thanks to everyone for the warm, wonderful hospitality and especially to Carol for sharing your ‘little slice of Heaven.’  We especially enjoyed the quiet and peace while in the midst of God’s awesome nature.  His creativity is majestic as evidenced in each of the unique and gorgeous trees.

“We go back to the city now refreshed, renewed and replenished — exactly our reason for coming.  Thank you for allowing us to celebrate our 40th wedding anniversary with you. ”  – JP & K.

The Texas Farmhouse at BlissWood Bed and Breakfast is a restored two-story farmhouse furnished with turn-of-the-century antiques.  It has two bedrooms (one upstairs, one downstairs) and a fully furnished kitchen with working antique 1920′s gas stove and working 1926 GE refrigerator.

The Farmhouse is near the barn area, in the heart of our working ranch. Prices start at $219 per night and include continental breakfast.

Our setting is secluded and peaceful, but activities abound, should you wish to pick up the pace. We offer bicycles, bass fishing and horseback riding, to name just a few.
