Cat Spring, Texas, Christmas Parties

T’is the season for Christmas parties, and our Cat Spring restaurant is a lovely place to host them. For small parties, reserve a table during or regular hours. Larger parties may want to consider booking the entire restaurant between 10:30 and 3 p.m..

Carol’s Cat Spring, Texas, Restaurant is open on Friday and Saturday evenings and for Sunday brunch. Doors open at 5 p.m. for Happy Hour, which lasts for an hour; dinner service begins at 5:30 p.m. and concludes at 9 p.m.. Sunday Brunch is offered between 11 a.m. and 2 p.m.

We serve hearty, seasonal cuisine. The food is creative and upscale, but the atmosphere is relaxed and casual. Sample entrées include Grilled Cajun Spiced Shrimp served on a bed of wild rice with fresh green beans, and Pork Loin with avocado salsa,melted cheese, and mashed potatoes. Our informed servers are happy to recommend wine pairings.

Truchard Wine Dinner

Tony and Jo Ann Truchard have been growing grapes in the Carneros region of the Napa Valley since the mid 1970s. They’ve been making wine from those grapes since 1989. They consider themselves “a big vineyard and a small winery”, and their deep understanding and respect of the land, the weather, and the grapes is palpable.

Tony was raised in Texas, and he and Jo Ann are returning to attend the next Wine Dinner at our Cat Spring Texas restaurant, at 7 p.m. on November 16, 2010. This is a wonderful opportunity to learn about the wine industry from the inside, and to meet a delightful couple, as well.

During the evening we’ll pair delicious hors d’oeuvres with Truchard wines from the Carneros Region of Napa Valley. Expect a night of excellent company, delectable food, and extraordinary wine.

Celebrate Texas Wineries

Texas has a thriving wine industry that has been growing steadily and gaining acclaim over the years. Once considered home to sweeter wines, Texas is now recognized as having ideal conditions for a wide variety of grapes; it therefore produces a wide variety of fine wines. We are planning to celebrate Texas wine on September 30 at our fine dining restaurant adjacent to our Texas Guest Ranch.

Fall Creek Vineyards was established in 1975 by Texas businessman/rancher, Ed Auler and his wife, Susan. The vineyards are located eighty miles northwest of Austin in the Texas Hill Country where the sandy loam soil, warm days and cool breezes off Lake Buchanan provide an excellent microclimate for growing premium wine grapes.

The inspiration for the winery came in 1973 when the Aulers, on a trip to France, noted remarkable similarities in the soil, terrain and microclimate of parts of the French wine country and their own ranch. “I became convinced that certain parts of the Texas Hill Country would be ideally suited to grape growing,” says Ed.

He was right. Anyone who enjoys wine wouldn’t think of visiting parts of Texas without stopping by at least one winery, and there are many “wine trails” that will lead happy tasters to one winery after another.

At the end of September, spend a night or two at our Central Texas lodging and join us for our celebration of Texas wineries in general, and Fall Creek Vineyards in particular. For $79 per person you will enjoy six courses superbly paired with Fall Creek wines. Plan to stay the night at our guest ranch near Houston, so that you can sit back and allow yourself to relax and enjoy each sip. Then stroll back to your private cottage under the huge Texas sky. This could just be the makings of an ideal romantic getaway.

We are looking forward to a delicious wine dinner tomorrow night at Carol’s at Cat Spring, my restaurant that is adjacent to my Texas weekend getaway, Blisswood.

A reception with a selection of amusing bites

Tomato Soup with black and green olive ciabatta toast; Napa Merlot

Grilled hearts of romaine with shaved Parmesan and a light herb vinaigrette dressing; Pinot Grigo

Halibut Steaks grilled and topped with pineapple salsa; Napa Chardonnay

Petite Beef Wellington: center cut beef tenderloin with wild mushroom ragu and a puff pastry; side by side tasting Napa Cabernet and Single Vineyard Cabernet

Chicken Bacon bites – Free range! Seasoned and seared with a sweet and spicy dipping sauce.

Oysters Rockefeller – Fresh Blue Point oysters topped with sauteed spinach and bacon, then baked.

Chocolate spiced soup or mixed green salad with strawberries, spiced candied pecans and apple cider vinaigrette.

Chilean Sea Bass – Pan seared with white rice, fresh spinach and saffron burre blanc

Beef Tenderloin – Served with chocolate vegetable chutney seasoned and seared & set atop potatoes

White Marble Farm Quail – stuffed with our chorizo cornbread stuffing, baked in butter and finished with sweet and spicy cranberry sauce.

Texas Bed and Breakfast: Carol’s Wine Dinner & Horse Whisperer

Look forward to another delicious wine dinner at Carol’s at Cat Spring. On Wednesday, February 4th, the six-course dinner will include beverage selections from Flora Springs Winery in St. Helena California. Napa Come to Carol's for a wine pairing dinnerValley Wine Country, of course!

The meal begins at 6 p.m. with appetizers followed soup and salad selections. Main courses include halibut steaks and petite beef wellington. The wellington is a mini center cut of beef tenderloin with wild mushroom ragu and wrapped in puff pastry.

And of course no proper Texas dinner would be complete without some delicious fresh-baked dessert! Look forward to a chocolate surprise cake to finish it off and perfectly complement the last glass of wine! All of this for $69 per person.

We hope this tempting menu will persuade you to come to Cat Spring for a visit to our Texas Bed and Breakfast! We are having the Lady Horse Whisperer back on Sunday January 25 for a full-day session from 10 a.m. to 4 p.m.

Janice Terra is a skilled trainer and teacher. We had a very successful workshop last time she was here, and I hope you will have a chance to take a Texas weekend getaway and reunite with the animals. There are plenty at Blisswood!
