Chef Ryan Theodore (Chef Theo)
Theodore, “Chef Theo”was a veteran chef, boasting more than fifteen years in the restaurant industry, and came from a fluent background in cooking up the best of current gourmet cuisine. Graduating with a culinary arts degree from the prestigious Delgado Culinary Institute in New Orleans, Chef Theo served as executive chef at Sweet Lorraine's and the Bourbon Orleans Hotel, both in the Crescent City.
Fleeing from the Katrina disaster, Chef Theo was like other fellow New Orleans' residents who relocated to the Houston area permanently. Chef Theo took his own experiences from chef-driven cuisine to maintain the essence of the restaurant, keeping Carol’s at Cat Spring on the minds of travelers and country dwellers looking for an elegant dining experience.
Chef Theo, 35 years old, died in an automobile accident March 14, 2006 en route to Houston for a benefit where he had been invited to display his cooking skills.
Chef Theo and his wife, Veronica, had been raising her sister's son, Clarence, who came to live with them when Veronica's sister died nine years ago.
He was full of life and love and will be dearly missed.

He knew the restaurant business inside and out, very innovative, professional in all ways, and was more than my right-hand man."
Keep his family and us in your prayers, as I know God has a plan. I have spoken with his Beloved Veronica, and she said "God doesn't make any mistakes."
