March 01, 2007 Hi, there ~ I just can’t rave loud & long enough about your prize-winning beef tenderloin best bite that I was fortunate to sample at the 2007 wine tasting event at the Houston Rodeo: BRAVO!!! It was my first invite to the wine tasting event & I was so excited to see that there were local restaurants there, other than ones from the Houston metro area. FABULOUS!! And to know that I sampled (more than once!) your winning Best Bite was so very fun! That beef tenderloin absolutely melted in my mouth! Congrats again to your award at Uncorked!, & hope to dine at Carol’s SOON! Cheers,

If anyone has had the pleasure of eating at Ruggles Grill in Houston and enjoys superb service, fantastic gourmet food and a great selection of dinner wines, then Carol's in Cat Springs, TX is the place for you. Carol's Cafe offers fine dining without the big city prices. The Cafe is beautifully appointed and offers top notch service, fantastic gourmet food and an atmosphere that cannot be matched anywhere. Carol's Cafe definitely deserves one of X2's restaurant awards. Bill, who led the Goldwing ride there, really outdid himself finding this "diamond in the ruff". A big hats off to him for leading a great ride to such a fine eating establishment. If you missed this one, well you really missed out. I just have to say that the dinner we had this past Saturday was delicious. The waitress even remembered us. I am a salad eater and the vinaigrette dressing was superb. I know Greg liked having the sausage added to his "Carols' Favorite" meal. Thank you for the appetizer. The crab legs were very tasty. We plan to have dinner at your restaurant once a month, so we will see you in September. Hopefully we will introduce your restaurant to other Goldwing riders that we have recently met. My name is Deborah Dougherty. My husband and daughter dined at your restaurant on a Sunday evening on our return trip from San Antonio. We had passed the restaurant on numerous occasions. This time there were cars outside and we decided to venture in. We were greeted so warmly at the door , I felt like we were entering a family home for dinner. Our dinner was scrumptuous. We had stayed at 2 four star hotels with the finest restaurants in San Antonio, and your restaurant was by far the most excellent meal we had during our trip. I had the whistlestop chicken and my husband had the chicken fried steak. I could tell there was a great amount of attention paid toward the meal. I wanted to share that complement with you. I told my girlfriends about your restaurant and also about the brochure on your bed and breakfast inn. They sounded very interested and asked me to see what the policy was regarding check in and check out and if the Dog Trot House was available in Sept (we are celebrating a girlfriends birthday). We just adored your restaurant and felt as though we had found a rare jewel. The food was remarkable. The ambience was sophisticated yet so friendly. By the second night, we felt very much at home. You are truly a delight; beautiful, bright, enthusiastic, great fun, and a wonderful ambassador for Cat Spring and the adjoining area. Meeting you was truly the highlight of our brief respite.
